YH linen baker’s couche is a beige woven cloth with an overlocked edge, offered in five sizes. Form folds in the cloth to support and separate shaped baguette and other bread dough during its final proof. Choose a size for your baking setup; one cloth is supplied in the selected size.

Choose a couche size

Choose by the length and number of shaped loaves you plan to proof and the available work surface. Options: 36 × 45, 45 × 77, 88 × 65, 120 × 70 and 150 × 60 cm. One cloth comes in the selected size.

Allow room for the cloth folds

For a baguette-proofing setup, plan the work area and the cloth folds together. The listed dimensions describe the whole YH linen cloth; raised folds use some of that area to separate the shaped loaves. The useful space depends on your loaf length and the spacing you leave between folds, so a cloth size does not promise a fixed number of baguettes. Select one of the five listed sizes; each unit contains one cloth.

How to use the couche

Lightly flour the cloth as appropriate for your dough and form raised folds. Place shaped loaves in the channels with cloth folds between them during final proofing. Transfer the dough carefully to your baking surface when ready.
